01 / ABOUT THE PLACE
About this place
At 6:30 a.m., with the quiet still lingering in Toyosu Market’s management facilities building, the counter on the third floor is ready to welcome diners after the morning’s preparations. At 龍寿司, a good place to start is with the omakase sushi, put together around the day’s catch and what is in season. Richly marbled bluefin tuna, white fish and seasonal silver-skinned fish arrive one piece at a time, straight from the chef’s hands. The rhythm makes for a breakfast with a particular sense of occasion in the market.
After the omakase: choosing a few extra pieces
After working through the omakase course, you can add a few pieces that catch your eye from the day’s recommendations. The blackboard and recommendation cards show seasonal fish with their place of origin noted, rich shirako, and the restaurant’s signature anago, gently simmered until tender. You can look them over and ask the chef for advice as you choose. A beer or chilled sake, sipped while you take your time over a favourite piece, is another small pleasure of dining at the market.
Rice bowls and the morning hours
For a more substantial meal, there are rice bowls as well as sushi: the bowl of natural bluefin tuna marinated in soy is topped with thick slices, while the special chirashi comes loaded with assorted toppings. The restaurant is open until 2 p.m. It can get busy around lunchtime, while the early morning tends to be a calmer time to eat. The counter makes 龍寿司 an easy place to stop by on your own: settle in, take in the market’s energy and put together a meal at your own pace.
